Tomorrow's Lunch: Lentil Salad with Salmon and Avocado August 01, 2012 by melissabethk in Food Boil 1 cup of French green lentils in one cup of water. Toss with olive oil. Stir in 2 tablespoons of plain Greek yogurt. Top with smoked salmon and thinly sliced avocado. Shred mint leaves on top. Yum!
